Pulled Rib Sesame Zucchini Stir Fry
Another original recipe from your folks @homecookedfeast - when the leftovers are in the fridge but you don't want to eat them anymore, make a new dish!!

- ½ cup pulled ribs pre-cooked/leftover
- 1 cup zucchini cut like thick disks
- ½ cup red bell pepper (or whatever colour)
- ½ cup onion thin sliced, vertically
- 1 tbsp cooking oil
- 1 tbsp oyster sauce
- ½ tbsp sesame oil
- soy sauce to taste
- salt and pepper to taste
- sesame seeds garnish
- green onion and/or cilantro garnish
During prep, remove all meat from 4-5 pork back or baby-back ribs, finely chopped, all bone and hard-bits removed.
Preheat pan to med-high heat. Heat cooking oil, save sesame oil.
Add onions and zucchini. Add in peppers 2-3 minutes later, once zucchini has softened up in the flesh, but skin/outside still hard (but not crisp/crunchy)
Stir in sesame oil and oysters sauce. Flavour with soy sauce, to taste.
Remove from heat. Garnish and serve.
