Pulled Rib Sesame Zucchini Stir Fry

Another original recipe from your folks @homecookedfeast - when the leftovers are in the fridge but you don't want to eat them anymore, make a new dish!!

Ingredients
  

  • ½ cup pulled ribs pre-cooked/leftover
  • 1 cup zucchini cut like thick disks
  • ½ cup red bell pepper (or whatever colour)
  • ½ cup onion thin sliced, vertically
  • 1 tbsp cooking oil
  • 1 tbsp oyster sauce
  • ½ tbsp sesame oil
  • soy sauce to taste
  • salt and pepper to taste
  • sesame seeds garnish
  • green onion and/or cilantro garnish

Instructions
 

  • During prep, remove all meat from 4-5 pork back or baby-back ribs, finely chopped, all bone and hard-bits removed.
  • Preheat pan to med-high heat. Heat cooking oil, save sesame oil.
  • Add onions and zucchini. Add in peppers 2-3 minutes later, once zucchini has softened up in the flesh, but skin/outside still hard (but not crisp/crunchy)
  • Stir in sesame oil and oysters sauce. Flavour with soy sauce, to taste.
  • Remove from heat. Garnish and serve.
  • Enjoy!
