For when you meant to pick up some tomatoes but forgot… make this extra good Korean Red Pepper corn salsa instead of your pico de gallo.

So easy even a bachelor’s could make this!

With really simple ingredients, there’s no reason not to try making this one. Use fresh steamed, smoked corn or heck, you can even use frozen corn!

From there, wrangle up an 1/8th of an onion and a small handful of cilantro with some basic spices and lime juice and you’re in business.

If you don’t have Korean red pepper powder for your corn salsa, use fresh diced jalapeno, chili powder or crushed red chilis! So many substitute options!

Homemade Corn Salsa

Don't like tomatoes or just don't have any? You're in luck – some pico de gallo style corn salsa!

Ingredients
  

  • 1 cup chopped corn fresh/cooked or frozen
  • 1 tbsp red onion finely minced
  • 1 tbsp cilantro finely chopped
  • 1 ½ tsp korean red pepper powder
  • ½ lime juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½-1 tsp garlic minced, fresh

Instructions
 

  • Mix corn, red onion, cilantro, garlic in a small-medium sized bowl.
  • Mix in red pepper powder, oil, lime juice and salt and pepper, to taste
  • Garnish and enjoy!
