Put those pork balls in my mouth

When the night has come, and the land is dark… use the “other white meat” to light up your dinner! Rooting through the fridge and freezer, I found some ground pork. I deliberated long and hard over doing a Chinese-style mapo tofu (I also found tofu). But, to my delight, I also came across some lemongrass and immediately jumped on the Vietnamese bandwagon (take that, tofu!). From the depths of the freezer, I bring you a Kai-riginal recipe for Lemongrass Pork Meatballs.

The beauty and the beast

This is a really simple recipe and given that what this website stands for (which is cooking at home and being creative!) The beauty of this dish is that it’s really easy and you can cook it almost any way you want. Simple oven bake on a cookie sheet, or throw them on the grill and add a few grill marks on those puppies.

Any time you wanna cook some meat at home, as long as you don’t burn it, it will be better than nothing eating that meat, right? Right. …but I mean try not to burn it.. but a little char is nice 😉

All you’ll need for this recipe is a few simple ingredients and you can easily leave out several with little impact on the overall effect. These lemongrass pork meatballs are very simple, but offer beautifully complex flavours. Give this recipe a shot and let me know how it goes!

Equipment

  • BBQ or broiler

Ingredients
  

  • 2 lb ground pork
  • 1 tbsp finely chopped red onion
  • 2 thai chili finely chopped
  • 2 tbsp lemongrass
  • 1-2 tbsp soy sauce
  • 1 tsp garlic powder
  • 3 shakes Worcestershire sauce
  • 1 tsp salt
  • 1½ tsp ground pepper
  • 2 tbsp cilantro finely chopped, optional
  • 1 egg for stickiness, optional

Instructions
 

Preparation

  • Preheat oven to 400°F or BBQ grill to medium-high 400°F
  • Combine all ingredients into a medium-large mixing bowl.
  • Mix thoroughly until all components are satisfactorily mixed.
  • On a plate or a cooking tray, roll out meatballs into whatever size you want…rounder balls will take longer to cook, that's the only variable in there! Patties are good too 🙂

Over/Broiler – 400°F/204°C

  • Place well-spaced baking tray in pre-heated oven and bake at 400°F/204°C for 15-18 minutes.
  • If desired, flip or roll meatballs halfway through. Makes a nicer, rounder shape…or don't. After all, this is #homecooked however you like it!
  • Meatballs are done once they reach internal temperature of 160°F/71°C.
