Korean fusion kimchi coleslaw

Tired of always eating delicious smoked meat and BBQ with boring old vinegar or mayo coleslaw? Here’s a great, easy twist on a classic that is sure to impress: Kimchi Coleslaw!

If fusion cuisine is life, combining juxtaposing cuisines at home is how we make life super fun. I would describe this salad as having a “refreshing kick”, following a traditional look with a fusion taste!

Kimchi coleslaw is basically the same concept as a regular coleslaw with just a few minor changes. By adding some actual kimchi, spicing up with some Korean chilis, and toning it down with the tartness of rice vinegar and smoothness of sesame oil, you will be able to take your fusion BBQ feast to the next level. Of course, you’ll recognize all the mainstays of regular coleslaw – cabbage, green onion, shredded carrot, (red onion, bell pepper, celery, jalapeno) – highlighted by robust accents of cilantro, kimchi and sesame seeds.

Kimchi Coleslaw

Making fusion BBQ? Add some refreshing kick to your feast with just a couple of Asian ingredients to add some punch to your meal!

Ingredients
  

  • 2 cups cabbage shredded
  • ½ cup kimchi shredded
  • ¼ cup carrot shredded
  • cup green onion save some for garnish
  • cup cilantro save some for garnish
  • cup jalapeno optional
  • cup red pepper and/or celery finely chopped, optional
  • cup red or white onion optional
  • 1 tsp crushed red chilis or korean red chili powder (or, to taste) for image

Dressing

  • 1 tbsp rice vinegar or apple cider vinegar
  • 2 tsp sesame oil
  • salt and pepper to taste
  • sesame seeds, white and/or black garnish and texture

Instructions
 

  • In a large bowl, combine all chopped vegetables and mix together.
  • In a small bowl or jar, mix wet ingredients together.
  • Combine dressing into vegetable mix and stir together thoroughly.
  • Let sit in for minimum 15 minutes to an hour until vinegar flavour runs through cabbage and softens up mixture.
  • Enjoy!

Notes

Tons of optional ingredients in here. I’ve done it with red pepper, red onion, chili peppers or jalapeno..the key ingredients are cabbage, kimchi, carrots and sesame. 
As compared to a “regular” coleslaw, the major substitutions are in the vinegar and choice of oil. 
I’ve never done this with a mayo/cream base, but as I type this out, that sounds pretty tasty as well.
